Liberian Rice Bread

I found a recipe online for Liberian Rice Bread. 2 cups rice cereal 3 cups mashed bananas 1/2 cup vegetable oil 4 T sugar 1/2 tsp nutmeg 1 tsp salt 1 cup water 1 tsp baking soda Stir together. Pour into a well-greased 9 inch round cake pan. Bake at 400 for 30 minutes. Makes a semi-sweet, dense bread.

If you have the opportunity, run to your local library and please get this book on CD. There are a lot of acronyms that can be confusing, but are easily understood when spoken aloud. Kimberly Scott has a rich voice that brings forth all of the emotion and strength that Leymah is conveying making this an OUTSTANDING book.

This was a difficult book to read, but one I knew I should read. Leymah overcomes adversity to rally her people to oppose and finally put an end to war in Liberia.
